Zucchini Apple Bread

Ingredients
  • 4 cups all-purpose flour
  • 3 tsp. baking soda
  • 1 & ½ tsp. ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp. salt
  • 5 large eggs, room temperature
  • 1 & ½ cups vegetable oil
  • 2 cups sugar
  • 1 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 2 cups shredded zucchini
  • 1 & ½ cups chopped pecans
  • 1 cup grated peeled apples, (I cut ⅓rd by ⅓rd inch pieces.)
Instructions
  1. In a large bowl, combine the flour, baking soda, cinnamon, nutmeg and salt.
  2. In a large bowl, beat the eggs until frothy.
  3. Add the oil, sugars and vanilla, beat until blended.
  4. Stir into the dry ingredients just until moistened.
  5. Fold in the zucchini, pecans and apples.
  6. Transfer to 3 greased 8x4-inch loaf pans.
  7. Bake at 350 until toothpick inserted in center comes out clean, 55-60 minutes.
  8. Cool loaves for 10 minutes.
  9. Remove from pans to wire racks to cool completely.
