Irresistible Salad

Ingredients
  • SALAD:
  • 4 ounces Feta cheese, perhaps French Feta
  • 1 head Romaine lettuce,
  • ½ cup dried cherries
  • 1 small red onion to equal 3 ounces, thinly sliced
  • *PRALINE PECANS:
  • 1 cup pecans, whole
  • ⅓ cup sugar
  • DRESSING:
  • Prepare dressing ahead and shake several times.
  • ½ cup salad oil
  • 4 T. raspberry vinegar
  • ½ t. Tabasco sauce
  • 4 T. sugar
  • Serves 8 - 10
Instructions
  1. *PRALINE PECANS:
  2. Sprinkle ⅓ cup sugar in nonstick pan.
  3. On medium heat slowly let sugar melt, stirring constantly.
  4. Stir until sugar is dissolved.
  5. When the sugar is melted, on lowest heat, add pecans.
  6. Coat evenly.
  7. To avoid sticking, spread on foil sprayed with Pam.
  8. With fingers or forks separate pecans.
  9. Cool, and let dry.
  10. JUST BEFORE SERVING:
  11. Mix Feta, lettuce, cherries, and onion.
  12. Add just enough dressing to lightly coat.
  13. Toss well.
  14. Mix in pecans, reserving some for the top.
