Valentine Shipper - Stove Top Peanut Brittle
- 1 cup white sugar
- ¼ cup water
- ½ cup Karo light syrup
- 1 & ¾ cup = 10 ounces, raw peanuts
- (2 pkgs. 16 oz each makes 3 batches)
- 1 t. baking soda
- In a small, heavy pot, on medium low heat, bring sugar, syrup, and water to a boil.
- Add peanuts (stir just to coat peanuts, then do not stir).
- Cook to 308 degrees.
- Remove from stove.
- Add soda and stir fast.
- While mixture is foamy, pour out on well greased cookie sheet.
- Quickly press and spread out foamy mounds.
- When cool break into pieces.
- Store in air tight container.
- Last long - months.
- Four batches more than fills a 5 quart container.
