Valentine Shipper - Stove Top Peanut Brittle

Ingredients
  • 1 cup white sugar
  • ¼ cup water
  • ½ cup Karo light syrup
  • 1 & ¾ cup = 10 ounces, raw peanuts
  • (2 pkgs. 16 oz each makes 3 batches)
  • 1 t. baking soda
Instructions
  1. In a small, heavy pot, on medium low heat, bring sugar, syrup, and water to a boil.
  2. Add peanuts (stir just to coat peanuts, then do not stir).
  3. Cook to 308 degrees.
  4. Remove from stove.
  5. Add soda and stir fast.
  6. While mixture is foamy, pour out on well greased cookie sheet.
  7. Quickly press and spread out foamy mounds.
  8. When cool break into pieces.
  9. Store in air tight container.
  10. Last long - months.
  11. Four batches more than fills a 5 quart container.
