German Sweet Chocolate Cake

Ingredients
  • Cake:
  • 1 package, 4 oz. German Sweet Chocolate
  • ½ cup boiling water
  • 1 cup butter, 2 sticks
  • 2 cups sugar
  • 4 eggs, separated
  • 1 t. vanilla
  • 2 cups flour
  • 1 t. baking soda
  • ½ t. salt
  • 1 cup buttermilk
  • Frosting:
  • 1 & ½ cups evaporated milk
  • 1 & ½ cups sugar
  • 4 egg yolks, slightly beaten
  • ¾ cup butter
  • 1 & ½ t. vanilla
  • 2 cups coconut
  • 1 & ½ cups pecans, chopped
Instructions
  1. Melt chocolate in water, cool.
  2. Beat butter and sugar.
  3. Beat in egg yolks.
  4. Stir vanilla into chocolate.
  5. Mix flour, soda and salt.
  6. Beat into chocolate mixture alternately with buttermilk.
  7. Beat egg whites until stiff peaks form.
  8. Fold into batter.
  9. Pour into three 9 inch layer pans, lined on bottoms with waxed paper.
  10. Bake at 350 degrees for 30 minutes (if using heavy pans 40 minutes)
  11. or until cake springs back when lightly pressed in center.
  12. Cool 15 minutes, and remove from pans.
  13. Finish cooling on racks.
  14. Spread coconut-pecan frosting between layers and over top of cake.
  15. Coconut Pecan Frosting
  16. Combine evaporated milk, sugar, eggs yolks, butter,
  17. and vanilla in saucepan.
  18. Cook and stir over medium heat until thickened.
  19. Remove from heat.
  20. Stir in coconut and pecans.
  21. Cool until thick enough to spread.
