Brunch Potatoes

Ingredients
  • Baking potatoes
  • Bacon fat
  • Onions
  • Salt and pepper
  • Ketchup
  • Sour cream
Instructions
  1. Bake potatoes.
  2. Dice or slice potatoes.
  3. Brown onions in bacon fat.
  4. Coat potatoes in onions and bacon fat.
  5. Salt and pepper.
  6. Place in shallow baking dish, and cool.
  7. Cover and refrigerate.
  8. Reheat, uncovered, the next day, at 350 until browned.
  9. Serve with ketchup and sour cream.
