Alma's Cheesecake

Ingredients
  • Crust:
  • 2 cups graham crackers, crushed fine
  • ½ cup sugar
  • ¾ cup butter, melted
  • Filling:
  • 3 oz. Lemon Jell-O
  • 1 cup hot water
  • 8 oz cream cheese, softened
  • ½ cup sugar
  • 1 t. vanilla
  • 1 & ½ cup (12 oz.) evaporated milk (Pet Milk), chilled
Instructions
  1. Crust:
  2. Mix crushed crackers, sugar, and melted butter.
  3. Save out ⅓ cup of mixture for top of cheesecake.
  4. Press firmly into 9 by 13 glass pan.
  5. Bake at 350 degrees for 10 minutes.
  6. Let set.
  7. Cover and chill in refrigerator.
  8. Filling:
  9. Dissolve Jell-O in hot water.
  10. Cool to room temperature.
  11. Beat together cream cheese, sugar, and vanilla.
  12. Beat room temperature Jell-O into cream cheese mixture.
  13. In chilled bowl with chilled (clean) beaters, beat chilled condensed Pet Milk until thickened.
  14. Add room temperature Jell-O mixture, and beat again.
  15. Pour into prepared crust.
  16. Sprinkle with reserved crumbs.
  17. Cover and chill overnight.
