Orange Blueberry Muffins

- 1 cup quick-cooking oats
- 1 cup orange juice
- 3 cups all-purpose flour
- 1 cup sugar
- 2 & ½ teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon baking soda
- 1 cup canola oil
- 3 large eggs, lightly beaten
- 1 & ½ cups fresh or frozen blueberries
- 1 & ½ teaspoons grated orange zest
- Topping:
- ½ cup chopped walnuts
- ⅓ cup sugar
- 1 teaspoon ground cinnamon
- In a small bowl, combine oats and orange juice.
- In a large bowl, combine the flour, sugar, baking powder, salt and baking soda.
- Combine the oil, eggs and oat mixture.
- Stir into dry ingredients just until moistened.
- Fold in blueberries and orange zest.
- Fill paper-lined muffin cups two-thirds full.
- Makes 18 muffins.
- Combine the topping ingredients; sprinkle over batter.
- Bake at 400 degrees.
- Bake 15-20 minutes until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes before removing from pans to wire rack.
- Serve warm.
