Roasted Vegetables

Ingredients
  • Yellow onion
  • Purple onion
  • Green pepper
  • Cauliflower
  • Cabbage
  • Parsnips
  • Carrots
Instructions
  1. After cleaning vegetables, let them dry some.
  2. Cut into chunks, remembering that they will shrink while roasting.
  3. Cover edged pan with oiled foil.
  4. Spread vegetables evenly over pan.
  5. Brush with olive oil.
  6. Sprinkle with salt and pepper.
  7. Roast in preheated 450 degree oven.
  8. Depending on amount - roast 20 to 30 minutes.
  9. The vegetables pictured roasted 30 minutes.
